Ingredients:

4 cups sliced napa cabbage
1 cup shredded carrot
1 cup shredded zucchini
5 green onions, sliced
1 tbsp. chopped fresh mint
3 tbsp. seasoned rice vinegar
1 tbsp. olive oil

Vegetable Slaw With Mint

Method:
  1. In a medium bowl, combine cabbage, carrot, zucchini, green onion and mint.
  2. In small bowl, whisk vinegar and oil together. Pour over salad; toss to coat.
    Makes 4 to 6 servings
    Preparation time: 5 minutes
