Ingredients:

1 3-ounce veal scallopini
1/4 tsp virgin olive oil
1/2 tomato, freshly diced
1/2 tsp oregano, freshly chopped
1/4 tsp garlic, freshly chopped
1/4 tsp shallots, chopped
Salt and pepper to taste

Method:
  1. In heavy skillet, heat oil and saute veal quickly on both sides to a light brown.
  2. Remove from heat and keep hot on serving plate.
  3. Add all other ingredients and saute about 2 minutes or until hot.
  4. Serve over meat with pasta or rice.
