Ingredients:

1 pkg long grain & wild rice
1 lb pork tenderloin
1/2 cup kidney beans, rinsed & drained
6 ears baby corn, cut in half
1/2 cup carrots, sliced
1/2 cup green zucchini, sliced & quartered
1/2 cup yellow squash, sliced & cut in half
3/4 cup cherry tomatoes, quartered

Tuscan Pork Tenderloin

Method:
  1. Prepare pork loin according to producer’s instructions.
  2. Cook rice according to pkg instructions.
  3. When rice has been simmering for 15 minutes, stir in kidney beans, baby corn, carrots, green zucchini and yellow squash.
  4. Continue to simmer until liquid has evaporated, for about 10 minutes.
  5. Remove from heat and stir in cherry tomatoes.
    Serves: 3
    Preparation time: 30 minutes
