Ingredients:1
pkg long grain & wild rice
1 lb pork tenderloin
1/2 cup kidney beans, rinsed & drained
6 ears baby corn, cut in half
1/2 cup carrots, sliced
1/2 cup green zucchini, sliced & quartered
1/2 cup yellow squash, sliced & cut in half
3/4 cup cherry tomatoes, quartered |
Tuscan Pork Tenderloin

Method:
- Prepare pork loin according to producers instructions.
- Cook rice according to pkg instructions.
- When rice has been simmering for 15 minutes, stir in kidney beans, baby corn, carrots,
green zucchini and yellow squash.
- Continue to simmer until liquid has evaporated, for about 10 minutes.
- Remove from heat and stir in cherry tomatoes.
