4 tilapia fillets (6 ounces each)
2/3 cup cucumber, chopped and seeded
1/2 cup radishes, chopped
1 tsp vegetable oil
2 tbsp tarragon vinegar
1/4 tsp dried tarragon
A pinch of sugar
Salt and pepper to taste
2 tbsp margarine

Method:
Combine all the ingredients except tilapia fillets and margarine in a bowl and mix well.
Let stand at room temperature while preparing fish.
Saute tilapia in margarine in a large skillet over medium heat for 2-3 minutes on each
side or until fish flakes easily when tested with a fork.
