Ingredients:

1 lb lean pork loin or rump
1/2 cup dry sherry
1/4 cup lite soy sauce
2 tbsp vinegar
1 tbsp each brown sugar and corn starch
1/2 tsp each dry mustard and ground ginger
1 clove garlic, minced
2 tbsp vegetable oil
1/2 cup whole blanched almonds
2 onions, cut in narrow wedges
1/2 lb fresh green beans, trimmed & halved

Stir-Fry Almond Pork

Method:
  1. Trim and cut pork into thin strips. Place in bowl with sherry, soy sauce, vinegar, brown sugar, corn starch, mustard, ginger and garlic. Toss and set aside for 15 minutes.
  2. Heat oil in large skillet or wok over high heat. Add almonds; toss until lightly browned. Remove with slotted spoon; drain on paper towels. With slotted spoon drain pork from bowl, reserving liquid
  3. Add pork to oil in a skillet; toss for 5 minutes over high heat. Stir in onions and beans. Cover, reduce heat to medium and cook for about 5 minutes or until the vegetables are tender-crisp.
  4. Stir in almonds and reserved liquid. Cook, stirring for about 1 minute until the sauce is slightly thickened.
    Serves: 4
