Ingredients:
1 lb lean pork loin or rump
1/2 cup dry sherry
1/4 cup lite soy sauce
2 tbsp vinegar
1 tbsp each brown sugar and corn starch
1/2 tsp each dry mustard and ground ginger
1 clove garlic, minced
2 tbsp vegetable oil
1/2 cup whole blanched almonds
2 onions, cut in narrow wedges
1/2 lb fresh green beans, trimmed & halved |
Stir-Fry Almond Pork |
Method:
- Trim and cut pork into thin strips. Place in bowl with
sherry, soy sauce, vinegar, brown sugar, corn starch, mustard, ginger and garlic. Toss and
set aside for 15 minutes.
- Heat oil in large skillet or wok over high heat.
Add almonds; toss until lightly browned. Remove with slotted spoon;
drain on paper towels. With slotted spoon drain pork from bowl, reserving liquid
Add pork to oil in a skillet; toss for 5 minutes over high heat. Stir in onions and
beans. Cover, reduce heat to medium and cook for about 5 minutes or until the vegetables
are tender-crisp.
Stir in almonds and reserved liquid. Cook, stirring for about 1 minute until the sauce
is slightly thickened.
