| Ingredients: 1/2 tsp each pepper, ginger and
cinnamon
1/4 tsp cloves
1 whole broiler-fryer chicken
1/4 cup soy sauce
2 tbsp honey
1/4 cup plum jelly or jam
2 tsp each sugar and vinegar
1/4 cup chutney |
Spicy Plum Chicken |
Method:
- Combine pepper, ginger, cinnamon and cloves; rub1/2 of mixture inside chicken. To
remaining spice mixture add 1 tbsp soy sauce; rub on outside of chicken. Let stand for 1
hour in refrigerator.
- Place chicken in roasting pan and bake at 375 degrees F. for 1 hour. Combine remaining
soy sauce and honey, brush on chicken.
- Combine plum jelly, sugar, vinegar and chutney; rub on chicken. Return to oven and bake
at 450 degrees for 10 minutes or until tender.
