Ingredients:

6 small catfish, about 1/2 lb each, skinned & pan dressed
2 tbsp vegetable oil
1 1/4 cups corn meal
1 tsp salt
1/4 tsp pepper
1/2 tsp ground red pepper (cayenne)
1/2 cup all-purpose flour
2 eggs, slightly beaten

Southern-Fried Catfish

Method:
  1. Preheat oven to 275 degrees F. Heat oil (1/2-inch) in 12-inch skillet over medium-high heat until hot.
  2. Mix corn meal, salt, red pepper, pepper and reserve.
  3. Coat catfish with flour and dip into eggs. Coat with corn meal mixture.
  4. Fry catfish, 2 at a time, until golden brown for about 6 minutes on each side.
  5. Keep warm in oven while frying remaining catfish.
  6. Garnish with lemon wedges, if desired.
    Serves 6.
