| Ingredients: 6 small catfish, about 1/2 lb each,
skinned & pan dressed
2 tbsp vegetable oil
1 1/4 cups corn meal
1 tsp salt
1/4 tsp pepper
1/2 tsp ground red pepper (cayenne)
1/2 cup all-purpose flour
2 eggs, slightly beaten |

Method:
Preheat oven to 275 degrees F. Heat oil (1/2-inch) in 12-inch skillet over medium-high
heat until hot.
Mix corn meal, salt, red pepper, pepper and reserve.
Coat catfish with flour and dip into eggs. Coat with corn meal mixture.
Fry catfish, 2 at a time, until golden brown for about 6 minutes on each side.
Keep warm in oven while frying remaining catfish.
Garnish with lemon wedges, if desired.
Serves 6.
