| Ingredients: 1 lb shrimp
1 tsp butter
2 tsp olive oil
3 garlic cloves, minced or pressed
1/4 cup white wine
Juice of 1 lemon
1/4 tsp each salt and pepper
1/4 cup Italian parsley, finely chopped
Lemon wedges |
Shrimp Scampi

Method:
Melt butter and oil together in saute pan.
Add garlic, saute for 1 minute, then add shrimp.
Saute for 1 minute, add wine, lemon juice, salt and pepper.
Saute quickly while sauce reduces and shrimp turns pink.
Do not overcook. Sprinkle with parsley, garnish with lemon wedges.
Serve over noodles or rice.
