Ingredients:

1 lb bulk pork sausage
3 cups (8 oz) sliced mushrooms
6 cups (about 8 oz) sourdough or French bread cubes
3 cups shredded Swiss cheese or 12 oz cheddar cheese
4 green onions, sliced
5 eggs
2 cups milk
1 (8 oz) carton light or regular sour cream
1/4 tsp pepper

Sausage & Mushroom Casserole

Method:
  1. In a skillet, cook sausage until no longer pink; drain off excess fat. Add mushrooms, cook until tender.
  2. Place bread cubes in a greased 3-quart rectangular baking dish. Layer sausage mixture over bread. Top with cheese and green onion.
  3. Combine eggs, milk, sour cream and pepper; pour evenly over layers in casserole. Cover and refrigerate 2 to 24 hours.
  4. Preheat oven to 325� F. Bake uncovered for 50-55 minutes or until knife inserted near center comes out clean. Let stand for 10 minutes before serving.
    Makes 10-12 servings
