2 to 3 tsp. finely chopped jalape�o pepper
1 tbsp. butter or margarine
1/3 cup red currant or apple jelly
1 (6 to 7) lb roasting hen

Roast Hen With Spicy Currant Glaze

Method:
- Preheat oven to 325� F. Rinse hen; pat dry. Tie legs to tail; twist wings under back.
Place on rack in shallow roasting pan. Insert meat thermometer in thickest part of thigh.
- In a small saucepan, cook onion and pepper in butter until tender. Stir in jelly; heat
until melted.
- Roast hen, uncovered for 2 hours or until thermometer reaches 180� F. Remove tie from
legs.
- Brush with currant glaze. Return to oven for 10 minutes. Brush with remaining glaze.
Cover loosely with foil. Let stand 10 minutes before carving.
