Ingredients:

1/4 cup finely chopped onion
2 to 3 tsp. finely chopped jalape�o pepper
1 tbsp. butter or margarine
1/3 cup red currant or apple jelly
1 (6 to 7) lb roasting hen
Salt and pepper

Roast Hen With Spicy Currant Glaze

Method:
  1. Preheat oven to 325� F. Rinse hen; pat dry. Tie legs to tail; twist wings under back. Place on rack in shallow roasting pan. Insert meat thermometer in thickest part of thigh.
  2. In a small saucepan, cook onion and pepper in butter until tender. Stir in jelly; heat until melted.
  3. Roast hen, uncovered for 2 hours or until thermometer reaches 180� F. Remove tie from legs.
  4. Brush with currant glaze. Return to oven for 10 minutes. Brush with remaining glaze. Cover loosely with foil. Let stand 10 minutes before carving.
    Serves 12
    Preparation time: 2-3 hours
