Ingredients:

2-3/4 cups all purpose flour
2 sticks (1 cup) margarine, softened
1-1/2 cups powdered sugar
1 egg
1 tsp vanilla
1 tsp baking soda
2 tsp pumpkin pie spice

Pumpkin Spice Sugar Cookies

Method:
  1. Combine flour and baking soda; set aside.
  2. In a large bowl, with an electric mixer at medium speed, beat margarine, powdered sugar, pumpkin pie spice, and vanilla until creamy. Add egg, beat for 1 minute. Gradually stir in flour until blended. Chill dough for 2 hours.
  3. Roll out the dough on lightly floured surface to a 1/4 inch thickness. Using cookie cutters, cut dough into desired shapes; transfer to prepared baking sheets.
  4. Bake at 375 degrees F for 8-10 minutes or until lightly browned. Transfer to wire rack and let cool.
  5. Decorate cookies with icing as desired. Let cookies stand until decorations are set. Wrap and store at room temperature for up to one week.
    Preparation time: 15 minutes (excluding chilling time)
