cups all purpose flour
2 sticks (1 cup) margarine, softened
1-1/2 cups powdered sugar
1 egg
1 tsp vanilla
1 tsp baking soda
2 tsp pumpkin pie spice |
Pumpkin Spice Sugar Cookies

Method:
- Combine flour and baking soda; set aside.
- In a large bowl, with an electric mixer at medium speed, beat margarine, powdered sugar,
pumpkin pie spice, and vanilla until creamy. Add egg, beat for 1 minute. Gradually stir in
flour until blended. Chill dough for 2 hours.
- Roll out the dough on lightly floured surface to a 1/4 inch thickness. Using cookie
cutters, cut dough into desired shapes; transfer to prepared baking sheets.
- Bake at 375 degrees F for 8-10 minutes or until lightly browned. Transfer to wire rack
and let cool.
- Decorate cookies with icing as desired. Let cookies stand until decorations are set.
Wrap and store at room temperature for up to one week.
