Ingredients:

1/2 lb shelled raw prawns or very large shrimps
2 tbsp vegetable oil
1/2 tsp minced garlic
1/2 tsp grated fresh gingerroot
2 tbsp chopped scallions
1 tsp (or less) dried red chili pepper, finely chopped
2 tbsp each water & dry sherry
1 tbsp ketchup
A pinch of sugar
1 tsp corn starch

Prawns A La Szechuan

Method:
  1. In a wok, skillet or chafing dish (wok preferred) heat oil until quite hot.
  2. Saut� prawns, garlic, gingerroot, scallions and chili pepper. Cook for a few minutes.
  3. Add sherry, ketchup and sugar. Then add corn starch, mixed with water to thicken, and continue to cook, stirring and tossing constantly, until prawns are done.
  4. A few drops of sesame oil may be added, if desired.
    Serves 2.
