Ingredients:

1 12 oz pkg pork sausage, cooked & drained
4 baking potatoes (about 2 lbs)
1 1/2 tsp dried rosemary
1/2 cup sliced onions
2 cups fresh spinach, chopped
1 1/2 cup 2% milk
1 egg
1/4 cup grated Parmesan cheese
2 tbsp bread crumbs

Method:
  1. Preheat oven to 350�. Cook sausage in skillet until brown and crumbly and no longer pink. Set aside.
  2. Wash potatoes and slice them 1/4-inch thick. Place half of potato slices in greased 1 1/2 qt. baking dish.
  3. Sprinkle with half of rosemary. Top with half of onions, sausage and spinach. Repeat layers.
  4. Beat together milk, egg and 3 tbsp parmesan. Pour over potato mixture. Cover with foil and bake for 1 hour.
  5. After one hour, remove foil and top with bread crumbs and remaining parmesan. Return to oven for 15 minutes or until golden.
    Serves: 6
    Preparation time: 1 hour 15 minutes
