Ingredients:

2 lbs pork tenderloins
1 cup unflavored bread crumbs
2 tbsp fresh sage, chopped
2 tbsp fresh rosemary, chopped
2 garlic cloves, finely chopped
4 grinds of fresh black pepper
1 small onion, cut into eighths
1 cup apple cider
1/3 cup plus 2 tsp Dijon mustard
Salt to taste

Method:
  1. Combine bread crumbs with herbs and garlic.
  2. Cut eight slits in meat to hold onion wedges.
  3. Brush meat with 1/3 cup mustard and roll in herbed bread crumbs.
  4. Roast in 350 degrees F oven for 40 minutes or until juices run clear.
  5. Remove pork from pan. Place pan on medium heat and add apple cider.
  6. Boil until thickened and add rest of mustard and salt, then strain the sauce and serve on the side.
  7. Cut pork into 1" thick slices.
