Ingredients:

1-1/2 lbs lean, boneless pork tenderloin
1/2 cup orange juice
1/4 cup wine vinegar
1 garlic clove, minced
1/2 tsp oregano, crushed
2 small onions, quartered
1 large bell pepper, cut into 1" pieces
1/2 lb fresh mushrooms, washed

Method:
  1. Trim fat and cut pork into 1" cubes
  2. Combine juice, vinegar, garlic and oregano.
  3. Place pork, onion, pepper and mushrooms in a bowl; add marinade, then cover and marinate for 2 hours at room temperature.
  4. Put pork and vegetables alternately on skewers; grill over medium heat, turning frequently.
  5. Baste with marinade 12-15 minutes or until meat is done.
