Ingredients:

4 pork loin chops, cut 1 to 1 1/4 inches thick
1 tbsp butter or margarine
1/2 cup chopped onion
1/2 cup white wine
1/2 cup white vinegar
1/3 cup catsup
2 tbsp water
1 tsp salt
1/2 tsp dry mustard
1/2 tsp hot pepper sauce
1/2 tsp crushed tarragon leaves
1/4 tsp pepper

Piquant Pork Chops

Method:
  1. Brown onion in butter in a saucepan. Add vinegar, wine catsup, water, garlic, salt, dry mustard, hot pepper sauce, tarragon and pepper; simmer for 8-10 minutes.
  2. Meanwhile trim excess fat from pork chops. Place chops on grill and broil at moderate temperature for 10 minutes on each side.
  3. Brush chops with sauce and continue cooking for 15-20 minutes or until done, turning and brushing with sauce occasionally. Serve remaining piquant sauce with pork chops
    Serves: 4
