Ingredients:

1 (9-inch) unbaked pastry shell
1 (15 oz) can pumpkin ( about 2 cups )
1 (14 oz) sweetened condensed milk
2 eggs
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt

Method:
  1. Preheat oven to 425�.
  2. With mixer beat pumpkin, condensed milk, eggs, spices and salt.
  3. Pour into crust. Bake for 15 minutes.
  4. Reduce oven temperature to 350�; bake 35 to 40 minutes longer. Cool.
  5. Garnish as desired. Refrigerate leftovers.
    Topping Variations:
    Sour Cream Topping: In a medium mixing bowl, combine 1 1/2 cups sour cream, 2 tbsp sugar and 1 tsp vanilla extract. After 30 minutes of baking, spread evenly over top of pie; bake for 10 minutes longer. Garnish as desired.
    Streusel Topping: In a medium mixing bowl, combine 1/2 cup firmly packed light brown sugar and 1/2 cup unsifted flour; cut in 1/4 cup cold margarine or butter until crumbly. Stir in 1/4 cup chopped nuts. After 30 minutes of baking, sprinkle on top of pie; bake for 10 minutes longer.

    Makes 6 - 8 servings
