Ingredients:

Candied pecans
1/4 cup sugar
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. freshly ground pepper
Pinch cayenne
2 tbsp. butter
1 1/2 cups pecan halves
For the dressing:
2 tbsp. cider vinegar
1 tsp. Dijon mustard
1 tsp. honey
1/4 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. freshly ground pepper
6 tbsp. vegetable oil
For the salad:
8 cups mixed greens
2 ripe pears, sliced

Pear & Candied Pecan Salad

Method:
  1. In a small bowl, mix together sugar, 1/2 tsp. salt, 1/4 tsp. cinnamon, ginger, 1/4 tsp. pepper and cayenne.
  2. In medium skillet, combine butter, sugar mixture and pecans. Heat over medium heat, stirring constantly, until sugar has melted and nuts are coated. Cool on lightly greased aluminum foil.
  3. In a small bowl, whisk together vinegar, mustard, honey, 1/4 tsp. cinnamon, 1/4 tsp. salt and 1/8 tsp. pepper. Slowly whisk in oil.
  4. To serve, toss greens with dressing. Add pears and toss to coat. Sprinkle with pecans.
    Makes 8 servings
    Preparation time: 10 minutes
