Ingredients:

3/4 lb oysters, shucked and drained
1 tbsp corn starch
1 tbsp water
1-1/2 tbsp oil
1 garlic clove, minced
2 tbsp green onion, chopped
1 tbsp fresh ginger, peeled and minced
1/3 cup orange juice
2 tbsp low-sodium soy sauce

Method:
  1. Mix cornstarch with 1 tbsp of water in a small bowl and set aside.
  2. Heat oil in wok or skillet, add garlic, onion and ginger. Stir-fry for approximately 1 minute.
  3. Add oysters, orange juice and soy sauce, stir-fry for an additional 30 seconds.
  4. Add cornstarch mixture and cook until sauce just starts to thicken, about 1 minute more.
  5. Serve immediately with rice.
