Ingredients:

For the gingerbread:
1 1/4 cups brown Sugar
1/2 cup butter or margarine, softened
2 eggs
1 cup milk
1 tsp vinegar
1/4 tsp orange extract
2 cups all purpose flour
1 1/2 tsp ground ginger
1 tsp baking soda
1 tsp grated orange peel
3/4 tsp salt
3/4 tsp cinnamon
1/2 tsp nutmeg
For the frosting:
1 1/2 cups confectioners sugar
1 (3 oz) pkg cream cheese, softened
1 tbsp butter or margarine, softened
1/2 tsp grated orange peel
1/4 tsp orange extractok

Orange Frosted Gingerbread

Method:
  1. Heat oven to 350� F. Generously grease 9-inch square baking pan.
  2. Cream brown sugar and butter in a large bowl until light and fluffy. Add eggs, one at a time, beating well.
  3. Combine milk, vinegar and orange extract in a small bowl. Combine remaining gingerbread ingredients in another small bowl.
  4. Add flour mixture and milk mixture alternately to sugar mixture; mixing well after each addition. Pour into pan.
  5. Bake for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes. Remove from pan.
  6. Mix all frosting ingredients in a small bowl. Beat until desired spreading consistency. Frost on the baked cake.
    Makes 8 servings
    Preparation time: 1 hour 20 minutes
