Ingredients:

1 1/2 cups fresh mushrooms, sliced
1/2 cup carrots, shredded
1/2 cup onion, sliced
2 cloves garlic, minced
1 tbsp. olive oil
1 1/2 cups water
1 pkg. (6.6 oz.) toasted almond pilaf mix
1/2 cup fresh spinach, torn
1/4 cup Parmesan cheese

Method:
  1. In a large skillet, heat olive oil over medium heat. Add mushrooms, carrots, onion and garlic; cook for 5 minutes, stirring frequently.
  2. Stir in water, rice and contents of spice sack. Bring to a boil. Cover; reduce heat to low. Simmer for 15 to 20 minutes or until most liquid is absorbed.
  3. Stir in spinach and cheese just before serving.
    Makes 5 servings (1 cup each)
    Preparation time: 25 minutes
