| Ingredients: 4 Alaska cod fillets (4-6 oz each)
2 cups frozen whole kernel corn
1/2 cup chopped green or red bell pepper
1/2 cup salsa
1/4 cup chopped fresh cilantro
4 sheets (12 * 18-inches each) aluminum foil |
Mexican Style Alaska Cod

Method:
Preheat oven to 450 degrees F or preheat grill to medium-high. Spray foil with nonstick
cooking spray.
Place one Alaska cod fillet on each sheet of aluminum foil. Top with corn, green pepper
and salsa.
Bring up sides of foil and double fold. Double fold ends to form four packets, leaving
room for heat circulation inside packets.
Bake for 18-22 minutes on a cookie sheet in oven or grill for 10-12 minutes in a covered
grill. Sprinkle with cilantro before serving.
Makes 4 servings.
