Ingredients:
1 (12 oz) pkg pork sausage, cooked & crumbled
2 (5 oz) pkgs yellow rice, cooked
1 (15 oz) can whole kernel corn, drained
1 (10 oz) can diced tomatoes and green chilies, drained
1/2 tsp ground cumin
1 (15 oz) can of black beans, drained |
Mexican Rice

Method:
- Cook rice according to package directions.
- In a small skillet, sauté sausage with 2 tsp. of olive oil until brown and crumbly.
- Add cooked sausage to rice with corn, tomatoes & green chilies, and black beans. Add
cumin. Toss together and serve.
