Ingredients:

1 6-pound leg of lamb
1/4 tsp black pepper
1/8 tsp nutmeg, ground
1 tsp fresh garlic, chopped
2 tbsp thyme, chopped
2 tsp salt
2 tbsp oil

Method:
  1. Wipe lamb with damp cloth. Mix all other ingredients into a paste and rub over surface of meat.
  2. Roast in 300 degrees F oven for 30 minutes per pound or until desired doneness of meat.
  3. Remove lamb from roasting pan.
  4. Gravy can be made from drippings by adding flour and red wine.
  5. Fresh mint leaves cooked in gravy will add a refreshing flavor.
