Ingredients:

1 lb fresh green beans
1/2 cup red pepper, diced
1/2 cup green onions, sliced with tops
1/4 cup unsweetened apple juice
2 tbsp cider vinegar
1/2 tsp pepper
1/8 tsp oregano

Green Beans Salad

Method:
  1. Wash, trim and cut the green beans.
  2. Fill a large pan with 1" of water, bring to a boil and add green beans. Cook for 5-8 minutes. Drain and keep aside
  3. Combine the green beans with all other ingredients.
  4. Cover and chill in the refrigerator overnight.
  5. Serve chilled rather than at room temperature.
    Serves: 6
