| Ingredients: 1 to 6 lbs. beef
standing rib roast
3 tbsp. garlic, minced
1 tbsp. kosher salt or salt
1/2 tsp. ground black pepper
6 bay leaves
2 cups red wine

Garlic Rib Roast

Method:
- Preheat oven to 350� F. Mash the garlic, salt and pepper together to form a paste.
Spread paste over top and sides of roast.
- Place in shallow roasting pan rib side down. Add wine. Insert meat thermometer into
thickest part of meat.
- Roast for 1-3/4 to 2-1/4 hours or until thermometer registers 140� F. for medium-rare.
- Cover with foil and let stand for 15 minutes before carving. Temperature will rise to
145� F. during standing. Pass pan juices.
