1 1/2 lbs chicken breast halves,
boneless & skinless
1 pkg (1.25 oz) taco seasoning
1/4 cup oil
1/4 cup water
1/4 cup lemon juice
8 cups torn lettuce Suggested toppings: Salsa, sour cream, shredded cheddar cheese & black olives
Flavored Southwest Chicken Salad
Method:
In a glass dish or plastic bag, combine taco seasoning with oil, water and lemon juice.
Add chicken breasts, turning to coat all sides and marinate for 20 minutes.
Broil or grill the chicken breasts for 7-10 minutes per side or until done.
Cut chicken into thin slices and divide the lettuce evenly among four large salad
plates.
Top each serving with 1/2 chicken breast, sliced and garnish with choice of toppings.
