Ingredients:

1 lb boneless white fish, cut into 2-inch pieces
1 large egg
2 tbsp skim milk
3 1/2 cups crushed corn flakes
1 8 oz can crushed pineapple
1 tbsp corn starch
1/4 cup orange juice
1/4 cup barbecue sauce

Fish Nuggets With Pineapple Sauce

Method:
  1. Preheat the oven at 400 degrees F. In a small mixing bowl, whisk egg and milk together and keep aside.
  2. Place the corn flakes in a plastic bag. Dip the fish pieces in the egg mixture and drop in the bag with the corn flakes. Shake the bag until fish pieces are well coated with corn flakes.
  3. Place the corn flakes coated fish pieces on a greased baking sheet and bake for 15-20 minutes or until golden brown.
  4. Meanwhile, in a blender, puree the crushed pineapple. Pour this into a small sauce pan. Also add corn starch, orange juice, barbecue sauce and whisk to blend.
  5. Bring this mixture to a boil; reduce heat and simmer, stirring for 3-4 minutes until thick.
  6. Serve the fish nuggets warm with the pineapple sauce.
