Ingredients:

5 lbs country pork ribs
1 tbsp each fresh rosemary and marjoram, chopped
Salt & pepper to taste
1 bay leaf
4 ounces white vinegar
1 12-oz can sauerkraut
3 scallions, 1/4" slices
1 tsp caraway seeds
1 medium onion, large dices
1/2 cup water
2 large potatoes

Method:
  1. Season ribs with salt, pepper, rosemary, marjoram and bay leaf.
  2. Place bone side down on a sheet pan, add vinegar, bake at 350 degrees F until tender.
  3. Remove drippings. Add sauerkraut, scallions, ribs, caraway seeds, onions and 1/2 cup of water.
  4. Grate potatoes into mixture. Finish cooking on top of stove in a covered pan.
