Ingredients:

1 pkg (10 oz) roasted carved chicken breast
1 can (11 oz) mandarin oranges, drained, reserving
1/4 cup juice
1 medium onion, cut into 1-inch pieces
1 medium red or green bell pepper, cut into 1-inch pieces
1 tbsp firmly packed brown sugar
1/4 tsp ground ginger
2 tbsp olive or vegetable oil

Citrus Chicken Stir-Fry

Method:
  1. In 12-inch skillet, heat oil over medium-high heat and cook onion and pepper, stirring occasionally, 5 minutes or until crisp-tender. Reduce heat to medium.
  2. Stir in chicken, reserved mandarin orange juice, brown sugar and ginger; cover and cook until heated through, about 3 minutes.
  3. Stir in oranges and serve, if desired, with hot cooked rice.
    Makes 4 servings
