Ingredients:

2 cups carrots, peeled & thinly sliced
1/2 cup diced shallots or red onions
1 tbsp olive oil
1 tbsp red wine vinegar
2-3 tbsp fresh dill, chopped
Salt & pepper to taste

Method:
  1. Parboil carrots until tender yet crisp for about 2 minutes.
  2. Rinse under cold water and drain. Combine carrots and onions.
  3. Mix remaining ingredients in small bowl until well blended.
  4. Pour over carrot mixture and toss well. Refrigerate at least for 3 hours to blend flavors.
    Serves: 4
