whole chicken (deskinned)
2 tbsp. melted butter
250 gm crushed pineapple in juice, drained
1/2 cup maple syrup (or use 3 tbsp. honey)
2 tbsp. lemon juice
3 tbsp. dijon mustard
1 tbsp. soy sauce
2 tbsp. chopped parsley |
Chicken With Pineapple Glaze

Method:
- Preheat oven to 350 degrees F.
- Arrange chicken in a large baking sheet, breast side up (leave chicken whole, do not cut
into pieces).
- Brush chicken with butter, sprinkle salt and pepper. Bake uncovered for 30 minutes.
- In a bowl, whisk pineapple, maple syrup, lemon juice, soy sauce and mustard. Baste
chicken with some pineapple mixture. Continue to bake for another 45 minutes or till
tender.
- Put remaining pineapple mixture in saucepan and cook till thick and becomes a sauce.
Garnish chicken with parsley, serve with sauce and mashed potatoes.
