Ingredients:

1 whole chicken (deskinned)
2 tbsp. melted butter
250 gm crushed pineapple in juice, drained
1/2 cup maple syrup (or use 3 tbsp. honey)
2 tbsp. lemon juice
3 tbsp. dijon mustard
1 tbsp. soy sauce
2 tbsp. chopped parsley

Chicken With Pineapple Glaze

Method:
  1. Preheat oven to 350 degrees F.
  2. Arrange chicken in a large baking sheet, breast side up (leave chicken whole, do not cut into pieces).
  3. Brush chicken with butter, sprinkle salt and pepper. Bake uncovered for 30 minutes.
  4. In a bowl, whisk pineapple, maple syrup, lemon juice, soy sauce and mustard. Baste chicken with some pineapple mixture. Continue to bake for another 45 minutes or till tender.
  5. Put remaining pineapple mixture in saucepan and cook till thick and becomes a sauce. Garnish chicken with parsley, serve with sauce and mashed potatoes.
    Serves: 4
