| Ingredients: 1 (3-4 lb) chicken, cut into pieces
1 tbsp olive oil
Salt & pepper to taste
40 large peeled garlic cloves
1 1/2 cups white wine
1 tsp dried thyme
1/2 tsp dried rosemary
1 bay leaf |

Method:
Heat oven to 350 degrees F. Rinse chicken, pat dry, and set aside.
Heat oil in a large flame-proof, oven-proof casserole over medium-high heat.
Add chicken pieces, season with salt and pepper, and saut� on all sides until golden
brown, for about 7 minutes.
Add garlic and stir. Saut� until lightly brown, for about 4 more minutes.
Add wine, thyme, rosemary and bay leaf. Stir well to remove any browned bits stuck to
the bottom of the pan. Cover tightly and place in oven.
Bake about an hour or until chicken and garlic are very tender.
If you dont want to peel 40 cloves of garlic, you can purchase it already peeled
in your grocers produce section.
