1 4-oz chicken breast, skinless and
boneless
1/4 cup lemon juice
2 tsp olive oil, divided
1/8 tsp each salt and pepper
1 tbsp parsley, chopped
1 2-oz zucchini, cut in strips
1 2-oz yellow squash, cut into strips
1/2 2-oz red pepper, cut in strips

Method:
Marinate the chicken breast in lemon juice, 1 tsp olive oil, salt and pepper for 30
minutes.
Drain and grill chicken breast to desired doneness.
