Ingredients:

1 pkg (about 1 lb) fresh thin sliced skinless breast and boneless turkey or chicken breast cutlets
Salt and pepper to taste
1/4 cup grated parmesan cheese
1 can (13 1/2 oz) whole leaf spinach, drained well

Method:
  1. Preheat oven to 350� F. Cover a baking sheet with aluminum foil.
  2. Season breasts on both sides with salt and pepper to taste. Sprinkle cheese over one side of each cutlet, covering well.
  3. Top half of the cutlet with a heaping amount of spinach. Roll cutlet, or fold in half, and secure with a toothpick.
  4. Place on baking sheet and bake for 25 minutes, or until cutlets are cooked through.
    Makes 4 servings
    Preparation time: 25 minutes
