1/3 cup butter or margarine, softened
2 eggs
1 cup (2-3) mashed, ripened bananas
1/3 cup buttermilk
1 tsp. vanilla
1 cup finely chopped walnuts |
Banana Walnut Buttermilk Bread

Method:
- Preheat oven to 350 ° F. Grease a 9 * 5-inch loaf pan.
- Stir together flour, baking soda, and salt in a small bowl. Beat brown sugar and butter
in large bowl until light and fluffy.
- Add eggs, vanilla and bananas. On low speed, gradually add flour mixture alternately
with buttermilk and chopped nuts.
- Pour batter into prepared pan. Bake for 50-60 minutes or until toothpick inserted in
center comes out clean. Cool in pan for 10 minutes; invert onto cooling rack. Cool
completely. Wrap in foil or plastic wrap and store overnight before slicing.
Makes 1 loaf.
