Ingredients:

1 1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
3/4 cup firmly packed light brown sugar
1/3 cup butter or margarine, softened
2 eggs
1 cup (2-3) mashed, ripened bananas
1/3 cup buttermilk
1 tsp. vanilla
1 cup finely chopped walnuts

Method:
  1. Preheat oven to 350 ° F. Grease a 9 * 5-inch loaf pan.
  2. Stir together flour, baking soda, and salt in a small bowl. Beat brown sugar and butter in large bowl until light and fluffy.
  3. Add eggs, vanilla and bananas. On low speed, gradually add flour mixture alternately with buttermilk and chopped nuts.
  4. Pour batter into prepared pan. Bake for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes; invert onto cooling rack. Cool completely. Wrap in foil or plastic wrap and store overnight before slicing.
    Makes 1 loaf.
    Preparation time: 1 hour 20 minutes
