2 red potatoes
1 small onion
1 bell pepper
1 green onion
Few whole wheat tortillas
2 tbsp salsa
2 tomatoes
A bit of oil
Fresh cilantro
Salt and pepper to taste
1 tsp of oregano and basil leaves
1 tsp chili and cumin powder
1 tsp Lemon juice (optional)
Tacos
Method:
Dice up potatoes and cook in pan that has been lightly covered with oil.
Add diced onions, bell pepper, green onions until brown.
Also add spices and diced tomatoes. Cook until potatoes are done. Add fresh cilantro
Warm tortillas and add potato mixture to it.
Fresh lemon juice and salsa are added to the tortillas.
