| Ingredients: 1 3/4 cups all-purpose
flour
1 tbsp. baking powder
1/4 tsp. salt
2 eggs
1 cup milk
3/4 cup half-and-half
1/2 cup light olive oil |
Waffles With Pecan & Apple-Studded Maple
Syrup

Method:
- In a bowl, combine flour, baking powder and salt. Make a well in the center of the dry
mixture; set aside.
- In a mixing bowl, beat eggs slightly. Beat in milk, half-and-half and olive oil. Add egg
mixture all at once to dry mixture. Stir until just moistened (batter should be lumpy).
- Pour 1-1 1/4 cups batter onto a preheated, lightly greased waffle iron. Bake according
to the manufacturer's directions. When waffle is golden brown and done, carefully remove
waffle from waffle iron using a fork. Repeat with remaining batter.
- Serve waffles warm with Pecan & Apple Studded Maple Syrup (see recipe below).
- For pecan & apple studded maple syrup, in a skillet, saut� 1 medium apple, peeled,
cored and thinly sliced in 1 tbsp. light olive oil. Saut� until soft and golden brown.
Stir in 1 1/2 cups pure maple syrup and 1/3 cup toasted chopped pecans. Heat syrup until
warmed through. Serve with favorite waffles and pancakes.
