Ingredients:

2 cups all-purpose flour
2 cups granulated sugar
1 cup brown sugar
1 cup light olive oil
3 eggs
1 tbsp. baking soda
1 tbsp. baking powder
1/4 tsp. salt
2 cups quick-cooking oatmeal
1 cup chocolate chips
1/2 cup raisins

Method:
  1. Heat oven to 350° F. In a large bowl, combine sugars, olive oil and eggs. Mix until thoroughly combined.
  2. In another bowl, sift together the flour, baking soda, baking powder and salt. Add the dry ingredients to the olive oil mixture. Mix until well combined.
  3. Stir in oatmeal, chocolate chips and raisins. Roll dough into 1-inch balls. Roll balls in sugar and place 2 inches apart on cookie sheet. Bake for 15 minutes. Remove from oven and let stand for 2 minutes.
  4. Place cookies on wire rack to cool completely.
    Makes about 3 dozen cookies
