cups all-purpose flour
2 cups granulated sugar
1 cup brown sugar
1 cup light olive oil
3 eggs
1 tbsp. baking soda
1 tbsp. baking powder
1/4 tsp. salt
2 cups quick-cooking oatmeal
1 cup chocolate chips
1/2 cup raisins

Method:
- Heat oven to 350° F. In a large bowl, combine sugars, olive oil and eggs. Mix until
thoroughly combined.
- In another bowl, sift together the flour, baking soda, baking powder and salt. Add the
dry ingredients to the olive oil mixture. Mix until well combined.
- Stir in oatmeal, chocolate chips and raisins. Roll dough into 1-inch balls. Roll balls
in sugar and place 2 inches apart on cookie sheet. Bake for 15 minutes. Remove from oven
and let stand for 2 minutes.
- Place cookies on wire rack to cool completely.
Makes about 3 dozen cookies
