Ingredients:

2 cups chopped & seeded ripe tomatoes
1/2 cup thinly sliced shallots
1/4 cup sun-dried tomatoes (packed in oil), drained & chopped
1/4 cup fresh basil
1/4 cup Italian leaf parsley
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup olive oil

Sun-Dried Tomato Pasta Sauce

Method:
  1. In a large saucepan, combine all ingredients.
  2. Simmer for 20-30 minutes or until desired consistency is reached.
  3. Serve over hot, cooked pasta.
  4. This sauce is so delicious and so easy to make, you'll never want to go back to jarred pasta sauce. Improvise with the garlic and herbs to your liking.
    Serves 2-3
    Preparation time: 40 minutes
