Ingredients:

1 lb. pork tenderloin, cut into 1-inch cubes
1 large red bell pepper, cut into 1-inch pieces
5 green onions, cut into 1-inch pieces
For sauce:
1/2 cup fresh lime juice
1/4 cup mild olive oil
1 tbsp. granulated sugar
1 tbsp. chopped fresh cilantro
2 tsps minced jalapeņo peppers

Pork & Pepper Skewers With Chili Lime Sauce

Method:
  1. In a bowl, combine all sauce ingredients. Chill several hours to allow flavors to blend.
  2. Prepare grill. Alternately thread pork, bell pepper and onion onto metal skewers. Season with salt and pepper. Place kabobs on grill and brush with chili lime sauce.
  3. Grill over medium-high heat for 15-18 minutes, turning occasionally and basting with chili lime sauce until pork reaches an internal temperature of 155° F.
  4. Note: Use this sauce to baste chops or whole tenderloins while grilling.
    Serves 4
    Preparation time: 40 minutes
