Ingredients:1
cup all-purpose flour
1/4 tsp. salt
Light olive oil
2 eggs, beaten
1 cup milk

Hot Popovers

Method:
- Preheat oven to 400° F. Lightly brush the sides and bottoms of a popover pan or 6-oz.
custard cups with light olive oil. If using custard cups, place on a baking sheet and set
aside.
- In a medium bowl, using a wire whip, beat eggs, milk and olive oil until combined. Stir
in flour and salt. Fill the prepared cups half full with batter.
- Bake for 40 minutes or until very firm. After removing from oven, immediately prick each
popover with the tines of a fork to allow the steam to escape.
- Turn off the oven. Return popovers to the oven for 5-10 minutes. Remove from oven and
serve immediately. These airy popovers are great served with butter, honey, lemon curd or
homemade preserves.
