Ingredients:

1-1/4 lbs. boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup extra virgin olive oil
2 tbsps lemon juice
2 cloves garlic, minced
1 tbsp. fresh chopped mint
1 tbsp. fresh oregano leaves
1/2 tsp. each salt & ground black pepper
1 medium red onion
1 large yellow bell pepper, cut into 1-inch pieces

Greek Chicken Kabobs

Method:
  1. In a large bowl or plastic food storage bag, combine chicken, olive oil, lemon juice, garlic, mint, oregano, salt and pepper. Let chicken marinate in refrigerator for 30 minutes.
  2. Prepare grill. Alternately, thread chicken, onion, and bell pepper onto metal skewers. Discard any leftover marinade.
  3. Grill over medium-high heat until chicken is cooked through, for about 10-12 minutes. During grilling, baste with additional olive oil to prevent chicken and vegetables from drying out.
  4. Serving suggestion: Serve kabobs over a bed of rice or with pita bread. Garnish with fresh mint sprigs, and sprinkle with crumbled feta cheese.
    Serves 4
