| Ingredients: 1-1/4 lbs. boneless,
skinless chicken breasts, cut into 1-inch cubes
1/4 cup extra virgin olive oil
2 tbsps lemon juice
2 cloves garlic, minced
1 tbsp. fresh chopped mint
1 tbsp. fresh oregano leaves
1/2 tsp. each salt & ground black pepper
1 medium red onion
1 large yellow bell pepper, cut into 1-inch pieces |
Greek Chicken Kabobs

Method:
- In a large bowl or plastic food storage bag, combine chicken, olive oil, lemon juice,
garlic, mint, oregano, salt and pepper. Let chicken marinate in refrigerator for 30
minutes.
- Prepare grill. Alternately, thread chicken, onion, and bell pepper onto metal skewers.
Discard any leftover marinade.
- Grill over medium-high heat until chicken is cooked through, for about 10-12 minutes.
During grilling, baste with additional olive oil to prevent chicken and vegetables from
drying out.
- Serving suggestion: Serve kabobs over a bed of rice or with pita bread. Garnish with
fresh mint sprigs, and sprinkle with crumbled feta cheese.
