| Ingredients: 1/2 cup peeled, chopped
& seeded cucumber
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped yellow bell pepper
3 cups peeled, chopped tomatoes
1 cup prepared salsa, any style
1 cup tomato or vegetable juice
1 cup boiling water
1 tbsp. snipped fresh basil
1 tbsp. mild olive oil
1 tbsp. lemon juice
2 tsps instant beef bouillon granules
1/4 tsp. hot pepper sauce
Seasoned croutons, sour cream and fresh basil sprigs for garnishing |
Garden Gazpacho

Method:
- In a large mixing bowl, combine all ingredients. Cover and chill several hours or
overnight.
- To serve, ladle soup into chilled bowls or mugs. Top each serving with seasoned croutons
and garnish as desired. Your favorite salsa gives zip to this chilled tomato-based soup.
