Ingredients:

1 pasteurized egg
1/3 cup olive oil
1/2 cup buttermilk
1/4 cup grated Parmesan cheese
2 tbsps lemon juice
1 tbsp. Worcestershire sauce
2 cloves garlic, peeled

Creamy Caesar Salad Dressing

Method:
  1. Place egg in blender. Blend until smooth.
  2. Add oil in steady stream until well combined. Add remaining ingredients to blender. Blend until well combined.
  3. Chill for several hours or overnight before serving. Refrigerate any leftover dressing.
  4. The versatility of the olive oil makes it a great addition not only to sauces and pastas but to light-bodied salad dressings as well.
  5. For a Classic Caesar Salad, simply toss with crisp, Romaine lettuce, garlic croutons, fresh grated Parmesan cheese and sliced anchovy filets.
    Makes about 1 1/2 cups
    Preparation time: 5 minutes (excluding chilling time)
