1/2 cups coarsely chopped fresh cranberries
3 apples, cored, seeded & chopped
3 tbsps granulated sugar
2 tbsps lime juice
2 tsps mustard
1/2 cup extra virgin olive oil
1/4 cup sliced green onions
1 cup chopped pecans, toasted |
Cranberry & Apple Salad

Method:
- In a bowl, combine cranberries and sugar. Chill cranberry mixture overnight.
- Combine lime juice, mustard and olive oil. Add the cranberry mixture, apples, green
onions and pecans; mix well.
- Chill, covered, for 1 hour prior to serving. Sweet and savory, serve this as a salad or
as a condiment with meats. Especially delicious with pork.
Serves 6-8
