Ingredients:

8 (about 2 1/4 to 2 1/2 lbs) skinless, boneless chicken breast halves
Salt and pepper
2 tbsp olive oil
8 oz sliced fresh mushrooms
2 tbsp thinly sliced fresh basil or 3/4 tsp dried basil
1 clove garlic, minced
2 oz proscuitto, coarsely chopped
2 plum tomatoes, seeded and chopped
1/3 cup shredded parmesan cheese

Chicken With Proscuitto & Mushrooms

Method:
  1. Preheat oven to 350� F. Season chicken lightly with salt and pepper.
  2. In a large nonstick skillet, brown chicken, half at a time, in olive oil for 2-3 minutes per side. Transfer chicken to 3-quart rectangular baking dish.
  3. In the same skillet, cook and stir mushrooms, basil and garlic until mushrooms are tender. Remove from heat. Stir in proscuitto and tomatoes.
  4. Bake chicken breasts uncovered for 20 minutes. Spoon some of the mushroom mixture over each breast.
  5. Sprinkle with cheese. Return to oven; bake for 5 minutes more.
    Serves 8
    Preparation time: 30-40 minutes
