Ingredients:

2 carrots, grated
50g roasted and salted peanuts
1 garlic flake, coarsely chopped
1 green chili, deseeded & coarsely chopped
Salt to taste
125g yogurt
1/2 tsp sugar
15g coriander leaves, finely chopped

Carrot & Peanut Raita

Method:
  1. Crush the peanuts with a wooden pestle or rolling pin.
  2. Mix garlic, salt, green chili and crush to a pulp.
  3. Beat the yogurt until smooth and mix the garlic mixture.
  4. Also add the carrots, peanuts, sugar, coriander leaves and mix thoroughly.
  5. This raita compliments almost any meal and can be served as a relish with kababs or pakoras or with vegetable pulao.
