Ingredients:

1 cauliflower, cut into florets
300 gms spinach
60 gms ghee or butter
8 flakes garlic, sliced
1 tsp cumin seeds
2-3 onions, sliced finely
4 green chilies, slit lengthwise
1/2 tsp turmeric powder
1 tsp chilipowder
1 tsp garam masala powder
2 tomatoes, skinned & sliced finely
Salt to taste
Coriander leaves for garnishing

Cauliflower & Spinach Stir-Fry

Method:
  1. Heat the ghee in a pan, add garlic flakes and saute until golden brown. Add cumin seeds and stir-fry
  2. Add onions, green chilies and saute until golden brown. Add cauliflower and keep stirring frequently till half cooked.
  3. Add spinach and fry for a minute. Sprinkle turmeric powder, chili powder, garam masala powder and stir well.
  4. Add chopped tomatoes and stir fry for another 2 minutes. Lower the heat, sprinkle little water, cover and cook for 5 minutes.
  5. Add salt and coriander leaves. Garnish with roasted garlic flakes and slit green chilies. Serve hot with plain rice, parathas or rotis.
    Serves: 4
