| Ingredients: 250g white gram (without skin)
300g ghee or butter
100g khoya
300g powdered sugar
50g chopped dry fruits (cashew, almonds, etc.)
6-8 cardamom powdered for decoration
1/2 cup milk
25g almonds |

Method:
Soak the gram for 4-6 hours. Wash, drain and grind it to a thick, fine paste using as
little water as possible.
Heat ghee in a pan.
Add the paste, and cook on a medium flame, stirring frequently. When the paste dries up,
gets light brown and the ghee separates, remove it from the fire. Spread it on a plate.
Let it cool. Roast khoya in the same pan to a light pink color.
Mix together the gram, khoya, sugar, dry fruits and cardamom.
Sprinkle over little milk, rub the mixture and make pinuis by pressing a first full of
mixture tightly together.
The finger marks should be visible on the pinui. Decorate an almond on each pinui.
